Spring Spinach Salad with Fennel, Citrus & Medjool Dates
Ingredients:
5 cups fresh spinach (washed and dried)
6 Medjool dates, pitted and sliced
1 small fennel bulb, thinly shaved
1 orange or grapefruit, peeled and segmented
⅓ cup pistachios, roughly chopped
¼ cup crumbled goat cheese (optional)
For the dressing:
3 tablespoons olive oil
1 tablespoon fresh lemon juice
1 teaspoon honey
½ teaspoon Dijon mustard
Pinch of sea salt
Freshly cracked black pepper
Instructions:
Place the fresh spinach in a large serving bowl or platter.
Add the sliced Medjool dates, shaved fennel, and citrus segments.
Sprinkle the chopped pistachios and goat cheese over the top.
In a small bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper until well combined.
Drizzle the dressing over the salad just before serving and toss gently to combine.
